Macaroons 

Probably one of the BEST tasting raw cookies are the easiest to make. Macaroons are honestly so good that even a meat and potato man would devour them; (in fact, I know this to be 100% accurate) unless of course he doesn't like coconut. 

Let me also say that there are a few variations to this recipe and you really can't go wrong or make them taste bad! 

RECIPE:

1 c soaked {or unsoaked} almonds {or walnuts}

3 c coconut flakes or shredded dried
1 c agave or raw honey or maple syrup
1 vanilla bean
2 Tbls Coconut Oil/Butter
1 tsp celtic sea salt
optional: lemon peel or cacao powder 

As you can see there are a few variations to this cookie. You honestly, CAN'T GO WRONG with any of the options.

Put soaked almonds in the food processor. Blend until chopped into small pieces. Combine all of the rest of the ingredients in a food processer, blend for 30 seconds.

Use an ice cream scoop to plop dough onto dehydrator sheets. Dehydrate for 12 hours.

YUM!!!! Store in refrigerator.

note: you can also make these and store in fridge, as opposed to dehydrating if you don't have one! they won't be as good though!
